How do I wrap words or break lines in the label text?

Insert a \n (a backslash followed by an n) where you want the line break in the label text.

How do I change the title of the graph from Graph, Graph 1 etc.?

Double-tap on the graph background i.e. away from any node or edge. The Graph settings screen should appear. Edit the Title setting.
